Description

This dish is so simple… (4 cups and a stick) … its the cup-a, cup-a, cup-a, cup-a and butter-it-up type of recipe.  A cup of flour, cup of sugar, cup of milk, and a cup (or two) of berries, a stick of butter, to make something that will have you walking away with a whole dish of yumminess, and with NO desire to share AT ALL. 

A winner of the “Smith House” potluck contributions list…  and the occasional dinner dessert treat… Here you go!


Ingredients

  • 1 or 2 cups Blackberries
  • 1 cup Sugar
  • 1 cup Self-Rising Flour
  • 1 cup Milk
  • 1 stick Butter (plus a small pat to line your casserole or pyrex dish)

Instructions

  • Wash those blackberries. Let sit to dry a bit, so little to no water is left on them.
  • Use a pat of butter to butter your intended baking dish. Get your hands dirty on this one.  Ensure that dish is covered and smothered with that smidge of butter.  Now to the good stuff…
  • Melt your butter in a safe microwavable dish. Set it aside.
  • Pour 1 cup of sugar and the flour into a mixing bowl.
  • Add and stir in milk with the sugar. Mix well.
  • Carefully add in the sifted flour to ensure all is combined with no clumps.  A good whisk works well here.
  • Then, pour in the melted butter and mix it all well together.
  • Pour the batter into the buttered baking dish.
  • Sprinkle blackberries over the top of the batter; distributing evenly.
    • You get to use one cup for sure. Add more if you desire.
  • Bake in the oven at 350 degrees for 1 hour, or until golden.
  • Serve with a dollop of icecream!

Notes

  • Use this recipe in the typical 9×18 square Pyrex dish, a Corning Ware dish, or cast-iron skillet.
  • As you double or cut it in half, increase or decrease the size of your dish.
