Tender chicken and perfectly cooked rice are simmered together with flavorful seasonings, creating a dish that’s rich, hearty, and incredibly satisfying. Easy to make and even easier to enjoy, this all-in-one recipe is your go-to for a comforting dinner that’s as delicious as it is convenient.
Ingredients
- 1 1/2 lbs boneless chicken breast
- 1 cup jasmine rice
- 2 cups chicken broth
- 1 cup heavy cream
- 1 cup grated Parmesan cheese
- 1/3 large onion, chopped
- 3 cloves garlic, minced
- 2 tablespoons olive oil or avocado oil
- 1 tablespoon butter
- 1 teaspoon garlic powder
- 1 teaspoon thyme
- salt and pepper to taste(or any favorite all-purpose seasoning that you may have on hand)
- EXTRA: Add a cup of veggies if you choose… (extra broccoli, carrots, or squash that you have on hand… make this yours!)
- fresh parsley or green onion, chopped for garnish.
Instructions
- Prepare the chicken:
- Season chicken breasts with salt, pepper, garlic powder, and/or other seasoning of choice.
- In a large skillet, heat 1 tablespoon of the olive oil or avocado oil over medium high heat.
- Add chicken and brown on both sides until golden.
- Remove from the skillet, set aside, and chop into bite sized pieces.
- Saute the good stuff:
- In the same skillet, add the remaining 1 tablespoon of olive oil or avocado oil, and the butter.
- Then add the chopped onion, garlic, and thyme.
- Saute until fragrent and translucent.
- Toast the Rice:
- Add the rice to the skillet and toast for 2-3 minutes, stirring frequently.
- Combine Ingredients:
- Pour in chicken broth and heavy cream, stirring to combine.
- Bring to a simmer.
- Cook Chicken and Rice:
- Return chicken to the skille, and any additional veggies you wanted to throw-in (Broccoli, etc).
- Cover tightly, and reduce heat to low.
- Simmer for 20-25 minutes or until the rice is tender and the chicken is cooked through.
- Finish with Parmesan:
- Stir in grated Parmesan cheese until melted and creamy.
- Adjust seasoning with salt and pepper as needed
- Garnish with chopped parsley and/or green onion before serving
Notes
It’s a one pan wonder! So no need for sides, unless IT IS the side.
