Ingredients
- 1 cup gluten-free all purpose flour or Rice flour (Half and Half is best)
- 1 cup Yellow Cornmeal (ensure it is gluten-free)
- 1 tbsp Baking Powder
- 1/4 tsp baking soda
- 2 tbsp sugar
- 1/4 tsp salt
- 1–1/2 cups Buttermilk
- 1 large egg
- 3 tbsp of a neutral oil like avocado or vegetable oil
- 2 tbsp unslated butter
Instructions
- Preheat your oven to 375 degrees
- Combine all ingredients
- Oil a 9″ small cast iron skillet (or 9″ pyrex or corningware dish)
- Bake for 25 minutes or until the sides pull away from the skillet
